Cold Brew vs Iced Coffee: Why They Are Not the Same Drink

One is steeped cold for twelve hours or more. The other is hot coffee poured over ice. They taste nothing alike and one has far more caffeine.

In a city where it is warm ten months of the year, this is the most consequential coffee question there is. And most menus do not explain it, so people order one expecting the other.

What is cold brew?

Coarsely ground coffee steeped in cold or room temperature water for twelve to twenty-four hours, then filtered. No heat at any point.

Heat is what pulls the acidic and aromatic compounds out of coffee quickly. Take the heat away and those compounds largely stay behind, which is why cold brew tastes rounder, sweeter and noticeably less acidic. It also tends to taste chocolatey and heavy rather than bright.

What is iced coffee?

Coffee brewed hot, the normal way, then cooled and served over ice. Everything the heat extracted is still in the cup, so it keeps the acidity and the aromatic top notes that cold brew leaves behind.

Done badly, it is yesterday's drip over ice and it tastes like it. Done well, it is brewed at double strength directly onto ice so it chills instantly without going watery, a method called flash chilling or Japanese iced coffee, and it is genuinely excellent.

Cold brew steeping in a glass vessel with coarse coffee grounds
Cold brew is not coffee that got cold: it never met hot water.

Which one has more caffeine?

Cold brew, usually by a lot. The long steep and the high ratio of coffee to water produce a concentrate, and even after dilution a cold brew typically carries more caffeine per ounce than iced coffee.

This is the part worth knowing at four in the afternoon. If you are ordering something to get through the rest of the workday, cold brew will do more. If you are ordering something at five because you like coffee, it may keep you up.

Which one is less acidic?

Cold brew, clearly. That is its main selling point for anyone whose stomach objects to coffee. The cold steep leaves most of the acidic compounds in the grounds rather than the cup.

If acidity is why you stopped drinking coffee, cold brew is the one to try before giving up entirely.

Which should I order in Miami?

If it is genuinely hot and you want something smooth and strong that you can sip slowly without it turning sour, order cold brew.

If you want to taste the origin of the bean, order a well made iced coffee. The acidity you would be avoiding in cold brew is exactly where the fruit and floral notes of a good single origin live.

We pour both at GROU Coffee + Cowork, 4100 Salzedo St STE 5 in Coral Gables. If you are here for the afternoon with a laptop, the cold brew is the practical order and the regulars figured that out a long time ago.

Frequently asked questions

What is the difference between cold brew and iced coffee?
Cold brew is coarsely ground coffee steeped in cold or room temperature water for twelve to twenty-four hours and then filtered, with no heat at any stage. Iced coffee is brewed hot in the normal way and then cooled over ice. Because heat extracts acidic and aromatic compounds, cold brew tastes rounder and less acidic while iced coffee keeps its brightness.
Does cold brew have more caffeine than iced coffee?
Usually yes, and often by a significant margin. The long steep time and the high ratio of coffee to water produce a concentrate, so even after dilution cold brew typically carries more caffeine per ounce than iced coffee brewed at normal strength.
Is cold brew less acidic than regular coffee?
Yes. The cold steeping process leaves most of the acidic compounds in the grounds rather than extracting them into the cup, which is why cold brew is the common recommendation for people who find hot coffee hard on their stomach.
What is Japanese iced coffee?
Japanese iced coffee, also called flash chilling, is brewed hot at roughly double strength directly onto ice so it chills instantly. Because the ice is part of the recipe rather than an afterthought, the drink cools without becoming watery and keeps the aromatic notes that would be lost if hot coffee were simply left to cool.
Where can I get cold brew in Coral Gables?
