THE METHOD: These beans are honey washed, which takes approximately 25-40 days for the coffee bean to dry in its mucilage. Drying the seed this way increases the sweet and fruity flavors of the coffee. THE REGION: This Colombian region grows and produces one of the highest quality coffees in the country. Being one of the highest regions in the Colombian Andes Mountains, the heavy and cold winds help promote the drying process. THE COMMUNITY: "The Inga" indigenous group of this region, also called "Inganos," is community rooted in tradition. Growing coffee is not only the most important activity of the region, but it's part of their identity.
